Step 2: Heat the Maple Syrup
In a small saucepan, combine the remaining 1/2 cup + 1/3 cup water with maple syrup.
Bring to a boil, then reduce to a simmer for 5 minutes, whisking occasionally.
Step 3: Whip into Marshmallow Fluff
Slowly pour the hot syrup into the bloomed gelatin while mixing on low. Break up any clumps.
Increase to high speed and whip for 5–10 minutes, until thick, opaque, and fluffy.

Ingredients
1 ⅓ cup filtered water
¼ cup Goose Goods Gelatin
2/3 cup maple syrup
Crushed candy canes (about 3)
Optional: peppermint extract
Directions
Add 1/2 cup of water to a large mixing bowl and sprinkle the gelatin on top. Whisk until mixed fully and set aside (it will congeal into a big clump)
Heat the rest of the water (1/2 cup + 1/3 cup) and maple syrup in a small sauce pan on the stove and bring to a boil. Simmer for about 5 minutes, whisking occasionally
Slowly pour the maple syrup water into the gelatin bowl while mixing with an electric whisk or stand mixer on low. Make sure to break up any gelatin clumps
Add peppermint extract if using
Once fully combined, whisk on high for 5-10 minutes until it becomes thick (it should look opaque and thick like marshmallow fluff but you don’t want to over mix it or it becomes lumpy)
Transfer to a parchment paper lined glass dish and spread out evenly
Top with crushed candy canes
