  • 2.5 teaspoons Goose Goods Gelatin
  • 1 cup whole milk
  • 1 1/2 cups heavy cream 
  • 1/3 cup maple syrup or honey
  • 1 teaspoon pure vanilla extract (or seeds from 1 vanilla bean)

Instructions:

Step 1: Bloom the Gelatin
In a small bowl, sprinkle the gelatin over 1/2 cup milk and let it sit for 5 minutes to bloom. This step ensures the gelatin dissolves smoothly.

Step 2: Heat the Cream
In a saucepan over low heat, heat the cream, the rest of the milk and maple syrup/honey until incorporated, and it's hot but not boiling. Stir occasionally. Once heated, remove from heat and stir in the vanilla.
